Minecraft Java Edition 26.3 has 126 advancements across five tabs. Five of them are the roots that open each tab, earned along the way without a notification: getting a crafting table, entering the Nether, entering the End, killing or being killed by a mob, and eating or drinking anything. That leaves 121 to work toward. Twenty-five of those are challenges, the hardest ones, and nine stay hidden until you earn them. Here is how they split, every challenge with the game's own description, and the hidden ones, all read from the game's files.

Adventure is by far the largest tab, and holds almost half of the challenges. The Minecraft tab, which follows the early game from mining your first stone to entering the End, has no challenge at all.

Challenges are the advancements with a spiked frame, and several of them ask for a complete set of something.
Nether
Subspace Bubble: Use the Nether to travel 7 km in the Overworld.
A Furious Cocktail: Have every potion effect applied at the same time.
How Did We Get Here?: Have every effect applied at the same time.
Cover Me in Debris: Get a full suit of Netherite armor.
Return to Sender: Destroy a Ghast with a fireball.
Uneasy Alliance: Rescue a Ghast from the Nether, bring it safely home to the Overworld… and then kill it.
Hot Tourist Destinations: Explore all Nether biomes.
The End
Great View From Up Here: Levitate up 50 blocks from the attacks of a Shulker.
Adventure
Monsters Hunted: Kill one of every hostile monster.
It Spreads: Kill a mob near a Sculk Catalyst.
Bullseye: Hit the bullseye of a Target block from at least 30 meters away.
Sniper Duel: Kill a Skeleton from at least 50 meters away.
Blowback: Kill a Breeze with a deflected Breeze-shot Wind Charge.
Over-Overkill: Deal 50 hearts of damage in a single hit using the Mace.
Arbalistic: Kill five unique mobs with one crossbow shot.
Two Birds, One Arrow: Kill two Phantoms with a piercing Arrow.
Adventuring Time: Discover every biome.
Smithing with Style: Apply these smithing templates at least once: Spire, Snout, Rib, Ward, Silence, Vex, Tide, Wayfinder.
Hero of the Village: Successfully defend a village from a raid.
Husbandry
Two by Two: Breed all the animals!
A Balanced Diet: Eat everything that is edible, even if it's not good for you.
Serious Dedication: Use a Netherite Ingot to upgrade a Hoe, and then reevaluate your life choices.

The hidden advancements
These nine don't appear on the advancement screen until you earn them:
How Did We Get Here? (Nether): Have every effect applied at the same time.
Arbalistic (Adventure): Kill five unique mobs with one crossbow shot.
Voluntary Exile (Adventure): Kill a raid captain. Maybe consider staying away from villages for the time being…
Hero of the Village (Adventure): Successfully defend a village from a raid.
You've Got a Friend in Me (Husbandry): Have an Allay deliver items to you.
Birthday Song (Husbandry): Have an Allay drop a Cake at a Note Block.
Smells Interesting (Husbandry): Obtain a Sniffer Egg.
Little Sniffs (Husbandry): Feed a Snifflet.
Planting the Past (Husbandry): Plant any Sniffer seed.
Where to start
The "everything" challenges take the longest, so it pays to track them from the first day: Adventuring Time needs every biome, A Balanced Diet every edible item, Two by Two every breedable animal, Monsters Hunted every hostile mob, and How Did We Get Here? every effect at once. The newest ones build on newer content: Over-Overkill needs the Mace, Blowback a Breeze, and Smithing with Style eight different smithing templates.
